White tea

All colours of tea come from the same tree: the tea plant or camellia sinensis, and it is the various stages of processing that the leaf undergoes after being picked that determine the colour of each tea. White teas are those that undergo the least processing of the tea leaves, which are simply withered and dried. These very rare white teas were once reserved for the Emperors of China. Their very fine and subtle taste is now much sought after and appreciated by tea lovers.
